Pick once the pods are beginning to dry and shrivel up

Shell the beans and dry further in a single layer on a tray

Store in an airtight container

Harvest once the tips of the plant and the lower leaves are starting to brown. Lift using a fork or trowel

Hang in twine-tied bunches of 5–8 bulbs or lay on a drying rack in a cool, dry, well-ventilated location for 14–21 days

Braid the garlic or remove the stem and roots and store in a wire basket in a cool, dry location
